Cream of Corn Soup

4-6 servings
“I love this soup because you can enjoy it all year round. Incredibly delicious and creamy with (or without) cream. “


6-8 ea  Sweet corn, ears on cobb

1 ea  White onion, sliced or diced

4-6 ea. Garlic cloves, diced

3 qt Chicken stock or broth

1 cup  Heavy cream

To Taste  Salt and cracked blacked pepper


  1. Have the corn off the cobb.
  2. Add the corn and the cobbs , chicken stock, onion and garlic to a stock pot. Bring to a boil, reduce to simmer.
  3. Once the stock has absorbed the flavors, (20-30 min) Remove the added corn cobbs and discard.
  4. Add into vita-mix or high-speed blender.
  5. Remove the mixture into a saucepan and add salt and pepper as needed.

Chef's Tips

Less is more. All this soup needs for finishing seasoning is a touch of salt. Salt extracts the sweetness out of the corn and makes this sound a HIT!!!
